CHICKEN & GREENS BURGER
I have recently realized that it is actually so easy to include veggies in our kid's daily meals without making them fuss about it. So for a change from customizing pasta sauce with greens or vegetables, I tried my luck with the burger filling. In this recipe I used spring mix greens which is a combination of spinach, arugula, chard, kale etc. Throw in a good amount of greens as they are going to wilt to a teeny tiny portion while we sauté.
So here's the recipe, do try it and let me know if your munchkin loved it too!!
THINGS YOU NEED
- Burger Bun - 1 no
- Chicken - 1/2 cup boiled and shredded
- Chopped Greens - 1 cup (either spinach alone or a combination of spinach, kale, arugula)
- Cheese - 1/4 cup (I used mozzarella)
- Garlic - 2 pods crushed
- Salt & Pepper - To taste
- Butter - 1 tbsp.
METHOD
- Sauté chicken in butter for about 2-3 minutes and then add the chopped greens to it.
- Add salt, pepper, garlic and stir until dry.
- Add a layer of cheese inside the bun, spread the chicken on it and finish with a layer of cheese, close the burger.
- Pop it in the microwave for a minute so the cheese melts - you can also toast it on a pan to melt the cheese.
- Easy way to include greens in their meal :)
